My current favourite is:

350g pkt. spaghetti (cooked as on pkt.)
12 rashers of steaky smoked bacon (diced and fried till brown)
150g pine nuts (dry fried in non-stick pan till golden)
190g jar of sun-dried tomato pesto

When pasta is ready stir in tomato pesto, toasted pine nuts and fried bacon and serve!!

Yum Smile

I sometimes add cougettes too (2/3 of them cut into julienne strips/matchsticks and boiled for 3 mins in with spaghetti)

Trout fillets or whole trout
Unsalted butter
Capers
Lime juice
Wilted spinach

Chicken (either fresh in which case breasts are easiest, or leftover)
Mushrooms
Cream
Tarragon
Dijon mustard (or tarragon mustard if you can find it)
(Optional: garlic)

Pork chops
Unsalted butter
Chopped walnuts
Blue cheese

(mash the cheese with the butter and the chopped nuts, roll into a sausage shape using clingfilm and refrigerate, then chop into coins to melt on the chops)

Serve with mashed sweet potato (microwave sweet potato until soft then mash with a fork).

4 Chicken breasts
1 packet onion soup
1 packet veg soup
1 litre peach juice or large tin of apricots & the juice

Chuck everything into pyrex dish, bung in oven et voila. Very easy and very scrummy :o

Good bread, good cheese, rock hard conference pear.

Potatoes, onions, eggs, olive oil = tortilla.

Homemade wedges plus salad.

Cheese, chillis, onion, wraps, soured cream = quesadillas (but you need salad or salsa to go with it really).

Baked potato, butter, cheese, onion.

Pitta, dip, crudites / pitta, falafel or haloumi, salad

Potatoes, cream, garlic, gruyere = dauphinoisse (again it needs salad really)

Asparagus, balsamic, parmesan, good bread or omelette

I made this up out of leftovers the other day and it was yummy. Chopped onion, sliced aubergine, chopped smoked bacon, all fried until a little bit browned, then chucked into and ovenproof dish and covered with mozzarella, and baked until gooey/browned on top.

So:

aubergines
onions
bacon
mozzarella

Salmon and Rocket pasta

salmon fillets (steamed or grilled)
tub creme fraiche with the zest of one lemon grated into it and seasoned
bag of rocket

Cook pasta and when still hot tip in the rocket and stir to wilt then add flaked salmon and creme fraiche mixture.

If you open up a loin of pork (one with lots of lovely fat for crackling) and stuff it with peaches and herbs then tie it up and roast it, it is the best thing ever. Honest.

Holly I've tried the smittenkitchen tomatoe sauce. It's really good. No chopping and sweating onions and tastes better than normal tom sauce imo. But then adding loads of butter to stuff does have that effect.

LOL @ Getorf ... the recipe was in fact told to me by my Mum and it is supposed to be a tin of apricots ... sorry if I said peaches.

Anyhoo, we can only get dried apricots here so I use a litre of peach & apple juice poured over the packet soup sprinkled chicken breasts and it really is yummy ... honestly :o

spices [chilli, curry powder, garlic cumin coriander]
torilla

chuck it in a pan til its cooked

fry tortilla one side til bubbles

turn over add filling whilst still in pan

fold whilst in pan

serve

just had that for lunch

slice bacon and fry, slice the leeks and fry them too. Add tub of fresh carbonara sauce (sod homemade) and a bit of milk. Simmer for a bit, cook pasta, put in bowls. nom.
