leftover roast chicken

Can anyone explain to me why it's ok to eat cold leftover roast chicken in a sandwich, but if you turn it into a chicken pie or curry or whatever, they always say make sure it's piping
hot all the way through?

Is that right? So if you heat up your chicken so it's just warm, bacteria suddenly start growing on it? Where do they come from?

LOL of course not - I quite often eat room temperature chicken. Don't leave it hanging about warm though as the bacteria multiply fast.

And if I put in into a pie tonight and cooked it for half an hour at 180, was that enough to kill any bugs?! It was very hot - but suddenly anxious about having given my family some awful food poisoning.
