has someone got an good custard recipe? also do you think home made custard is more healthy that Ambrosia in a tin?
home made would seem higher in fat and tinned higher is sugar me thinks??

On the rare occasions we have custard, I use a tin of (out of date) Birds custard powder.
I use less sugar than they suggest and semi skimmed milk. I also add some vanilla extract.

you don't waste the egg whites - you make mini meranges Smile with the egg whites and add iceing sugar for half the caster sugar and a drop of coffee essence to flavour and they are then gooey and yummy - you could serve with the custard.

I haven't made custard for a while but I use a recipe from my old Good Housekeeping cookery book.

The custard sauce recipe can be done with either just yolk or whole egg; the baked custard uses whole egg. I've always used skimmed milk because thats what we buy; the sugar can be cut down or even replaced with a bit of splenda. So its basically eggs and skimmed milk, sounds healthy to me!

I use Nigella Lawson's recipe for 'real custard' (as she calls it) from How to eat. It always works very very well & yes I think it's definitely worth it compared to Bird's custard (which I also like as a second choice).

Can't remember the last time I made "proper custard"...converted to Ambrosia years ago, it's foolproof!
