ricotta & spinach canelloni

I have ricotta, spinach and canelloni.
Can you please help me put toghether a nice meal with these ingredients. Thank you.

cook the spinach, then squeeze it a lot to get rid of all the water. mix it with the ricotta, adding a scraping of nutmeg if you have any. make a tomato sauce (fry onion & garlic in olive oil, bung in a whole load of fresh tomatoes, a slosh of red wine & any herbs you have lying around, cook 'til slushy). stuff the canelloni with the spinach & ricotta mix, then put them in a big oven proof dish & pour the tomato sauce over it all. top with grated parmesan & cook in the oven at about 180 for half an hour.

well that's what i'd do. it isn't a recipe as such though.....

while you're there.... I have frozen spinach - how does that work? Do I just cook it as normal or do I have to defrost it or something first?

yes, I always use frozen spinach and defrost, drain and cook lightly.
