Made fudge that turned out to be toffee, that is.

Recipe:

1lb sugar
4oz butter
Small tin evaporated milk.

Usually it turns out granular and fudgey.

Today (not for the first time) it's turned out soft and chewy and not granular at all.

I can't figure it out. Did I boil it for too long??

Calamity-do not let it boil! Heat it and stir it constantly but don't let it boil. I only ever make chocolate fudge and thats the way I do it! Turns out lovely and velvety! Good Luck xxx
