Yorkshire Pudding Help!

Lately when I make Yorkshire puddings they rise right up and look perfect but once they've been out of the oven a few minutes they seem to deflate.

Any words of wisdom?

Gordon Ramsey has a good recipe for Yorkshire puddings which is foolproof. I would be happy to post it (tomorrow) if it would help.

lots of fat

oven as high as it can go

whisk whisk whisk and then rest the batter

never had a problem with yorkshires (choux pastry on the other hand :( )
