What are your storecupboard essentials?

I have certain things in that I know will always jazz up a meal. I'm curious as to what other MN'ers have as thier cannot be without cupboard stuff. Obviously taking into account theings like pasta/rice/flour etc i'm talking about the sauces, herbs, condiments you always keep in.

I am rarely without:
sesame oil and soy sauce-these two will make any manky veg a tasty stir fry plus I have ready chopped ginger and chillies which will often be used.

parmesan cheese and pesto

Marmite-use it as stock base for lots of things like bolognese

I almost always have baked beans, kidney beans and lentils in tins.

apple sauce
tartare sauce
mustard, three kinds
marmalade-nice easy glaze for pork
sweet chilli sauce-I cannot live without this stuff

anchovies
mushroom ketchup
worcester sauce
tomato puree
garlic puree
sherry

cant think of anything else right now.

I never know what to cook and never get time to cook properly, so at present my shelves contain these things to jazz up boring dishes quickly:

Apart from flour, sugar, butter, salt, pepper etc I have rice, lentils, pasta, couscous, noodles, quite a few spices and herbs (some dried, and some I grow in the garden). Always have onions, garlic, red chillies, root ginger in.

Have olive oil, sunflower oil, a couple of vinegars, soy sauce, olives, capers, anchovies, tomato puree, tinned tomatoes, mustard (grain mustard and English mustard powder).

Wine, sherry, beer, marsala, cider are always in stock.

Tinned beans (butterbeans, borlotti, cannellini etc), chickpeas.

Marigold bouillon powder. And mayo. And always have frozen peas and broad beans in.
