Pasta + Leeks/Runner Beans?

I think pasta is easiest for tea. I would like to use up at least two of:

  • Leeks
  • Runner Beans
  • 1/2 pack of mascarpone

I wouldn't mind using up:

  • cubetti di pancetta

I have:

  • onions
  • lemons
  • tomato passata
  • tinned chopped tomato
  • sundried tomato paste
  • probably lots of other relevant stuff

Any suggestions? I'm rubbish with both leeks and runner beans, so somewhat stuck.

i would keep it simple with a pancetta/pasta/lemon/chilli type thing. ummm but that doesn't really solve your runner bean issue, does it?

I'm tending towards Leeks/pancetta/lemon/mascarpone. I think. That would work, wouldn't it?

I have serious runner bean issues. I will have to work something out with them at some point. Maybe I'll start a runner bean thread.

(The thing is, I had a real Exorcist-type-vomiting event, about 6 years ago, after having had raw runner beans. I'm 99% sure they weren't the real cause, but they're associated with really scary vomiting, in my head. It was really horrid, I had to have a shot to make me stop vomiting.)

you could make spaghetti with leeks, pancetta and chilli (I think it's a recipe from Rome), it's delicious. You need a good bit of butter to cook the leeks (chopped finely), then add the pancetta and finally some chilli, and add to spaghetti.
With runner beans I'd do a pasta salad with tuna and a nice french dressing with lemon.
For your mascarpone, am still thinking.... I think I do a tomato and mascarpone tart that's yummy, but haven't got recipe book handy. You also need rocket and eggs I think (plus puff pastry)

i stir-fried some the other day (from our garden) in with some rice/egg/mushrooms and katchup manis. mmmmm
