Fat rascels

anyone got a good recipe to make these - I want to make some for my dad who loves them in Betty's tea rooms

Use to love taking home the leftover fat rascals when I worked in Bettys many moons a go.
I have found this recipe which looks about right.
If they don't turn out right, you can always order the real ones online, but at £5 for 4, a bit expensive, but probably so worth it.

pure thanks for that, do they really put lard in the fat rascels? I have some lard in the fridge but am not sure if it will taste ok?

Not sure, to be honest, was a long time ago that I worked there.
If in doubt, just use margarine, though a lot of traditional recipes used to use lard.

No, not Harrogate. used to work at the Betty's in Northallerton when DH was in the RAF. We were stationed at Raf leemimg. Visited Harrogate a few times, loved it.

Let me know how they turn out. I think the Betty's recipe is probably a hugely guarded secret - I have tried loads of alternatives "Fat Scamps", "Cheeky Rascals", etc. at other bakers' but none compare. I think the Betty's ones have more spices and things like mixed peel in.
