How do I cook ground polenta?

Packet says "cook as recipe".
Recipe says "cook as directions on packet".

I want to make fried slabs of polenta, a bit like tofu. I guess I need to make it into a thick paste first, then bake?

You need to mix it with boiling water and seasonings into a very thick, doughy paste. Try equal volumes water and cornmeal to begin with. THen you spread it in a baking dish or press it into a loaf tin and leave it to coll and set. Cut it into slabs and fry in butter.

You can use it to make cornbread and whatnot as well.

No advice I'm afraid but I had to just check that you weren't making polenta muffins.

I made that mistake once and would hate for anyone else to suffer. DP actually binned them and he never throws away food.

its actually really nice baked in the oven with lemon zest and thyme mixed into it
