Recipe ideas with Marzipan please.

Its my H's 30th at the weekend and he adores marzipan so i thought i's make him a cake or something with it it but not know where to start as i cant stand the stuff!

Any ideas ?

Lovely marzipan cake in the nigella "domestic goddess"book.Its good for a birthday as its made in a ring mold so looks pretty and festive.Its a plain cake with marzipan mixed into the mixture,so is very almondy-will go dig out recipe if it sounds the thing?

I made Nigella's and it was lovely. Covered in in cream and raspberries.

Almond cake:- 250g softened unsalted butter
250g softened marzipan
150g castor sugar
1/4 teaspoon almond essence
1/4 teaspoon vanilla extract
6 large eggs
150g self raising flour
and a 25cm springform tube pan or ring mould,buttered and floured.
preheat oven to 170g/gas mark 3.Chop the butter and marzipan to make them easier to break down and put them in the bowl of the food processor fitted with the double bladed knife,with the sugar.Process until combined and pretty well smooth.Add almond essence and vanilla extract,process again,then break the eggs one at a time through the funnel processing again each time.Tip the flour down the funnel,processing yet again,and pour the mixture into the prepared tin,using a rubber spatula to get all the mix out of the bowl(its sticky).Bake for 50 minutes but check from 40,Then when the cake looks golden and a cake tester/skewer/fine piece of spaghetti come sout cleanish,remove from the oven and leave to cool in the tin before turing out.(this is when you will feel grateful if its the springform you're using).
In the photo it is filled with fresh raspberries,so looks really pretty.Strawberries or cherries would be lovely I think.I made this for my DH's birthday and it went down well.

If you have some left over

Halve some fresh peaches & remove stone
Fill hole with marzipan
place in baking dish so marzipan on top
Pour about 1 inch dessert wine in bottom
bake in oven for 20 mins

How about a home made battenburg here (haven't tried this recipe myself so can't actually vouch for it - looks fairly straightforward though Smile)
