No sugar fairy cakes

Oh wise Mumsnetters, help me!

My Dad is a diabetic, and until recently he was very naughty and ate everything that he shouldn't. He was told by his doc that he'll have to start having injections if he doesn't cut out the sugar and so since the New Year he has been really good and stopped on all the chocolate, sweets, cakes etc.

He's having a 'wobble' at the moment and says that he is really craving some of my 'fairy' cakes (they are quite good Grin) and so I have been scouring the internet for a recipe that replaces sugar with sweetener, and haven't been too successful! Does anyone have any fairy cake/cupcake recipes using a sugar replacement? Or does anyone know if I can just replace sugar for sweetener?

I'd love to be able to give him something cake-like! Thanks in advance :)

Try replacing the sugar with sweetener, I don't thnk it'll work but it's worth a try. I think fairy cakes without sugar would be kinda yuck.

Tell your dad to go easy on carbs in general - an Atkins type diet will really help his diabetes. My sister has had diabetes since she was 6 and was always unwell following the usual NHS dietary guidelines. She has done a lot of research and now eats a very low carb diet and her blood sugars are perfect.
