Amazing veggie dishes?

I have some of dp's colleagues coming for dinner friday They are lovely and I want to cook something greatThey are veggie and although we eat a fair bit of veggie stuff and I like cooking I am not gourmet veggie at all so need some ideas for something easy and delicious and a bit impressive Any ideas ?I have all day to cook it etc and we have lots of shops here to choose from so anything goes really

No I keep meaning to, but haven't had the right occasion. Comments look good.

Have a look at the Riverford organic website. No need to buy from them but there are loads of veggie recipes on there, in the cook section.

Have eaten on both places lots (DH is veggie) - and they are yummity super duper.

or tap in ottolenghi on the guardian website, he has amazing veggie dishes. I made the very full vegetable tart and it was to die for.

I have been to those 2! Some amazing ideas here.Like the sound of the tart.Ironically I am sat here with a very trad beef stew bubbling away for tonight smells so meaty couldn't be more different!
