So what Nigella recipes work every time for you?

I have all the books and I'm fed up of trying recipes that fail or are just rubbish. I can follow a recipe and I'm a good cook but not confident enough to deviate from a recipe every time to fix it!

Which of her recipes always work or work with a tiny tweak?

Her recipe for smoked trout pate is amazing in Nigella Express! We also make it with smoked mackerel.

damp chocolate loaf - from how to be a d.G.
her pavlovas
her passionfruit curd
her FP danish pastry dough
the lamb with hummus from How to eat was nice
her stews
her georgian chicken stuffed with rice, and the green bean salad with yogurt herb dressing.

I think her latest books have been rushed thru production and haven't been tested that well. I haven't bought the last few for that reason, and although I have Kitchen, I haven't found much in it that I actually want to cook.

Good luck! I can think of more if you know what kind of thing you want to make!

also have you been on her website to read her "corrections" to recipes? there are a lot of errors in her books!

bacon · 31/01/2011 14:12

I have a christmas book and use the internet for the rest and have to say that they are fail safe for me.

Not sure which ones you are on about - interesting about the corrections, just read them and nothing much to say really.

Agree that before publishing all recipes should be tried and tested numerous times such as the Good housekeeping ones.

I use the BBC good food recipes on the net, always reading the feedback first just to check if some tweeking is needed.

marmalade pudding cake - use more marmalade than she says, and use a strong flavoured one

mince pie pastry

old fashioned chocolate cake

one pan sage and onion chicken and sausages

Pinner35 · 31/01/2011 14:15

painfullyhonest - can you do a link to the corrections page please. I'm being a bit of a thickie and since they updated the website, I can't find it. TIA

painfullyhonest · 31/01/2011 14:28

pinner I've just checked the site, it seems they've taken down the error page - maybe later editions have all been corrected?? [doubtful emoticon] but I guess it's a case of using yr nous and reading recipes carefully.

Marmalade pudding looks amazing - I have to try it!

Her veggie chilli is good (Feast) and so is her mattar paneer (also Feast) although I must admit I don't tend to slavishly follow either recipe and also tend to add more spice than she says.
