I am making some mini tarts for a buffet on Sunday; was originally going to do mini quiches but now someone else is, so I need some inspiration. They will basically be shortcrust pastry with different fillings. So far I have thought of Brie & cranberry and mushroom (but not sure how to prepare the mushroom). Any other ideas?
I am vegetarian so would ideally like veggie fillings, and in the house I have a red pepper, courgette, butternut squash, onions (inc 1 red one), sweet potatoes, and lots of cheese, but I can go shopping.
