Pheasants galore!

Running out of recipes for pheasant, any ideas?

Gosh, well, obviously roasted, then breast only wrapped in pancetta, numerous game casseroles, on toast (a la pigeon breast type thingy). Brain white wine freeze, I am sure I have more, but can't think right now.

I have about 20 portions in the freezer and have not yet thought as to exactly what I am going to do, so am keen to see what anyone else posts and if you get any great ideas, do come back and tell me!

Never, tried pheasant breast on toast, isn't that a bit dry even with a wrapping of pancetta or a sauce? Do you poach the breast first or do you roast it and slice it on toast? Interested!

I have made pheasant terrine: Prune and red wine and red cabbage casserole: Pheasant breasts in pancetta, cumin and white cabbage: curry and coq au vin type recipes. I made a good pheasant and celery and bacon pie yesterday and and some apple/cider recipes but just wanted something completely different. Any other starters would be good too!

According to Anthony WT treat it like chicken. I tend to slow cook mine and so far have done them on a bed of leeks, with a touch of cider and then making a cream sauce, done in tomatoes onions and garlic.

I'm sure we did it on toast, but you need to like your pheasant a bit pink and I think we did a little juice of onion and reduced red wine to go with it....

I'm off to dig some of my pheasant out of the freezer today for use this week, so may research some of your ideas, OP which sound yummy!
