What can i do with leftover roast pork?

bought to big a joint dont fancy a roast type meal again what can i do with already cooked pork? oh yesit has to be easy and tasty

Chop it up and add it to a stir fry? Heat it up in gravy and serve with mashed potatoes?

throw it in some curry sauce and add some veg
serve with rice and naan bread

Mince it up and turn it into the base of a cottage pie.

ok cook you rice then let it cool down, then heat some oil in wok, add a couple of beaten eggs and stir frantically, add your rice, grated carrots, pork and chopped spring onions, keep stirring until all nice and hot but don't let it go dry (add a bit of butter if it does). Serve with fish sauce to taste. Quick and easy!!
