Apart from spreading it on stuff or swirling in cream/ ice-cream?

Got a bit sitting around in cupboards and want to use it up before it goes funny.

TIA :)

Make a victoria sponge and ladle in between layers

this is a nice delia one - just obviously use the curd you've got, rather than making it.

In pancakes, with cream.

Or just get a spoon.

Mmmmm I love it on toast

You did say apart from swirling in cream, but I recently did a lovely dessert which was lemon curd, whipped up double cream and whipped up egg white. All stirred together, then I served it in a brandy snap basket with raspberries. Yum.

Jamie Oliver's raspberry and lemon cheesecake from his 30 minute meals book. I made it last friday. It was very simple and very tasty.

Lemon merinngue pie! DH's fave.

What Dittany said; google "Jam Thumbprint Cookies" for a recipe. Or swirl with vanilla yog. and crushed ginger cookies/biscuits for a (semi) healthy pudding.

lemon tart

or there is poncey lemon bar recipe in hummingbird bakery cookbook IIRC...

midnightexpress · 26/01/2011 21:46

Oh god that Hummingbird book, I wish I'd never bought the bloody thing! I have to rub my eyes every time I look at a recipe and say to myself How much butter? Really?? Half a kilo of sugar? And then the results just taste soooooo good.

This week I have fooled myself into thinking that the oat and raisin cookies are in some way healthy (270g butter, half a ton of sugar, eggs...)
