Cake icing question

Planning to make fairy cakes for DS b.day. If I put icing (icing sugar & water) how long do I wait before putting sprinkles so they stick but don't run - had disaster with anaemic smarties one year! Also what's a good chocolate icing cover?

it's the consistency of the icing that's key

you want it just a bit runnier than toothpaste - then it should go on the cake but not run off. Put the sprinkles on straight away and then they should all harden together.

Good chocolate icing - if you mix a few ounzes of softened butter with a 2 tablespoons of cocoa and then mix that in with the icing sugar (may need a drop of water if too thick), that makes a delicious chocolate icing.

Also those little haribo winegums (mini cola bottles, gummi bears etc) look very cute perched on top, and don't run Hope it goes well!

i've just made a choclate cake from last saturdays telegraph.It is a really basic bang it all in and whisk recipe. I "iced" it with nutella chocolate spead and choc chips. Easy and delicious.
