just made one, it was ok but the cooking method was weird and didn't work.

please share your fail proof recipes, i absolutely love the stuff and it's a great way to use up eggs and bread....

Melt some butter, dip bread triangles in melted butter and layer in dish.
Sprinkle each layer with a few currants

If the bread isn't very crusty I don't bother to remove the crusts.
Sometimes I spread marmalade on the bread as well.

Whisk 2 eggs with three quaters of a pint of milk and 2 tablespoons of castor sugar - you can also add cointreau or ginger wine or brandy.

Pour over the bread and leave to soak for at least 3 hours.

Sprinkle the top with demerara sugar

Bake in the oven

Sometimes I use brioche instead of bread and then I omit the sugar.

I spread butter and marmalade on both sides of the bread (crusts cut off).

Inbetween layers of bread sprinkle mixed peel, sultanas, mixed spice, caster / gran sugar.

Sprinkle the top with demerara sugar.

Not sure of my egg to milk measurement, think prb similar to above.

stew - can you let me know how it turns out please? I need to take a pudding to a friend's next Sunday and thought I could make this ahead and then whack it in her oven.

I have this recipe which is so easy:

cut up 6 croissants or however many you think will fill your bowl. Halfway through sprinkle choc chips -white, dark, milk - continue with croissants then more choc chips on top. Mix up 300mls cream and 5 eggs and some sugar and vanilla essence, pour over, sprinkle bit of sugar on top, cook at 170 ish for about 35 mins, Yummy.

I like Nigella's chocolate chip bread and butter pudding. I cheat and use M&s chocolate chip brioche in place of the bread and it's delicious.

lidl do a chinoise which is amazing for this.

Also pannettone...if you have any left over from christmas

Great with marmalade, as already suggested, or apricot, or ginger jam

Try and use double cream, it gives a much nicer custard and allow to soak before it goes into the oven

Probably a couple of eggs, a good half pint of double cream, couple tbs sugar, sploosh of vanilla or vanilla seeds.

Might have to make this now!
