Cooked Elms, anyone know what it is/they are?

I've been looking at a hotel in France where we are maybe going to a wedding later in the year. I was looking at the menus for the restaurant and one of the items listed was Les ormeaux cuisinés-translated as cooked Elms.

Does anyone know what that would be? I've never heard of it before and I'm intrigued.

Ahh I had a sneaking suspicion that it might have been something fish/seafood related,that is another item to cross off the menu then. Hmm, can see me living off chips if we go there.
