it's got to that time of year where i buy in a sack of potatoes (instead of just enough for what i'm cooking) and i usually use them for mash etc to go with other food but has anybody got any recipes for things to do with potatoes that i can use store cupboard herbs/spices/pulses etc to make

there must be more to the humble potato than just mashing/chipping/baking.............

Curry Bible, by Madhur Jaffrey has lots of yummy curries for using up potatoes - e.g. potato and chickpea, potato and frozen pea curry - I cook at least one a week. I'd REALLY recommend the book, it's great for cheap food!

Leek and potato soup - just need to get some leeks as well.

Boil them up with some stock and anything else you feel like putting in, then blend - makes a lovely thick filling soup, and freezes well.

left over mash is great mixed wiht a beaten egg and fried in cakes very slowly

put a tomato ketchip face on - gret for a light meal

Chop 1 large leek and 4 rashers of smoked bacon into small pieces and fry gently in garlic olive oil for a few mins.

Melt in a large dollop of butter
Add flour until its like a rue

Add a good sprinkling of nutmeg and then add enough milk to make a sauce.

Once the sauce has thickened and started to bubble, remove from heat and throw in a generous handful of fresh parmesan.

Slice potatoes raw into thick crisp (about half an inch thick) with skins on.

Layer potatoes, then sauce, potatoes, sauce until you've filled large oven dish.

Grate MASSIVE amounts of cheddar cheese over the top and sprinkle some parsley.

Cook in a medium oven for about an hour or until the potatos are soft.

Serve with garlic bread and more parmesan.

OMG I'm sooooooooooooooooo having that tonight now!
