Eggs, Parsnips, Bacon, Blue cheese.... all need using up. Any ideas?!

I have all the above being the items most in need of being used up... don't need to use all tonight (preferably use Bacon though). Have potatoes suitable for jacket or chipped in the oven.

I'm thinking (possibly) some kind of hash/rosti/bake type thing, maybe a poached egg on the top/side, but wasn't sure if the parsnips or blue cheese would fit in there, and if they don't, what else do I need to pad out a hash type meal?

Any ideas most gratefully received!

Hash with baked beans and egg would be yummy, loads of onion and herbs. Disgustingly yummy I love comfort/nursery food

Spanish omelette type thing with bacon and blue cheese? And then something else with the parsnips tomorrow.

Quiche or flan? Get a pack of shortcrust pastry (or make some, if you have the inclination) and line a tin. Chop and lightly dry fry the parsnips and bacon, crumble cheese and mix with eggs (2 should do it) and milk, cream, creme fraische (whichever you've got, or a mix)

Roasted honeyed parsnips and blue cheese tomorrow if you haven't used them - nice with salad leaves :)
