Light,easy main course ideas sought?

Two old mates coming for supper.
Have already done my stalward thai salmon fillet, but looking for a light (chicken,fish) main which does not require much last min prep.
Thinking maybe Nigel slater lemon chicken but also seeking light stuffed chicken recipe and not finding much that isn't cheesy ( bit rich)
Want to serve with a dark green leafy salad and probably a grain based fruity salad.
Any ideas would be great.

abdabs antony worrall thompson just gave this one in his webchat - sounds amazing:

A failsafe is making a slash inside a big chicken breast, inserting a mixture of parmesan, mozzarella, ricotta and basil and wrapping it all in a couple of slices of parma ham. Secure with a toothpick if required (I never do). Pan fry until golden and pop in the oven for 15 mins. Serve with pasta (penne or spaghetti) tossed with garlic, parsley and chilli and lots of olive oil. Piece of cake (or not, as the case may be).

Nicoise (sp) salad?

Light, easy, can be preped in advance and put together when your friends arrive.

Blanched green beans, cold cooked new potatoes, cherry tomatoes halved, good black olives (pref pitted). Make a good vinegrette with lemon and e.v. olive oil to dress it with and used tinned tuna if you are feeling frugal and chargrill some fresh stakes if you are feeling flush.

Ok as promised. Recipe for pomegranate and feta herb salad which I do according to Annie bell 'In My KItchen' but have seen many variations on it including some on BBC website.

Half a pomegranate (obviously just the seeds)
A good handful of chopped mixed herbs - will work with many but I generally have mint, coriander and parsley around.
A small pack of feta
Six tbsp olive oil - good stuff
Two tbsp lemon juice
Half a red onion - either in rings or chopped fine( or none, more or less to taste)
A couple of portions of a grain - i have usually used quinoia, but have recently found a fab and fast grains mix in a ready to eat packet which has couscous and soya flakes too ( available in the main supermarkets - lentils or brown rice would work too)

Put grains in your bowl.then the herbs.then the onion.
Dish in the oil and lemon....crumble over the feta, and finish with the pomegranate. When ready to serve gently toss .... But leave the 'jewels' of fruit at the top ( I'm so nigella)
Eat ...lovely with lightly poached salmon or just on it's own for lunch.
