Hi, have finally given in to DH and agreed to make beef wellington. He wants it made with a whole fillet of beef and pate.
Could really use some advice/recipe.
Thanks x

bumbums my DH makes this gordon ramsay one and it is divine!

I think traditionally the pate is a combination of the parma ham and the mushroom paste... anyway it's yuuuuuum.

Good luck.

Funny, I was coming on to recommend the Gordon Ramsay one with Parma ham we used at Christmas - was fantastic! But I see you already have it!

Yummy!

I made the Delia Smith one last december, can't find the recipe online for some reason (bizarre because that's where I got it from). It's divine, if you need a copy of the recipe I can send it in your inbox as I've kept a copy?

I do the Delia Smith one, except she calls it Beef en Croute with mushrooms not pate around the fillet. It is delicious.

Brasso, oh yes that's the one :) It's delicious.

For side dishes to go with it- I recommend steamed new potatoes with butter & fresh parsley, sauteed cabbage with garlic & bacon & petits pois a la francaise (ie peas with lettuce, butter & parsley).

Yum!!! I might plan a repeat sometime soon...It's a very special recipe, beef wellington.
