anyone makes potato pancakes? what gadget do you use..

.. for grating/shredding the potatoes (as well as onions/carrots)?
I still do this by hand and must automate the process. I like the potatoes literally pulped rather than grated, the only thing I can think of that would do it is a juicer.
What equipment would work best?

I grate them and then use a potato ricer to squeeze out as much liquid as possible, so that when you make the pancakes they're really crispy.

but do you grate by hand? I am longing for the gadget as my ds loves them and I find it such a bloody (literally) pain - I tend to grate my fingers in the process Shock

I use the food processor, its just a cheap one but it has a good grater blade.

Buzz, do you get really small pieces from the food precessor - or are they long, alnmost julienne-like shreds (that's what I get from mine, so not happy)

there are 2 blades in mine, with the fine one I expect you would get smaller pieces? Depends on the size of teh potato you put in too, chop it up first and you'll get smaller bits.

Oooh - I'm always grating with my food processor! I've got 2 blades 2 so can get fine and fat bits. Although i'm lazy and just grab whichever blade is closest Grin

If you use the side of the grater with tiny holes, they will be basically reduced to mush.

What about one of those fine rotary graters you use for Parmesan cheese? That would make it very fine and keep your fingers safe!

Yes, I need the tiny holes, looks like I will have to upgrade my processor as it doesn't have that grater and doing them by hand is just too painful.
