Pig's heart - anyone remember Hugh's recipe?

Seem to remember Hugh F-W cooking bolognese sauce using pig's heart. Was inspired enough to buy pig's heart yesterday at supermarket (along with ham hock to make pea and ham soup). Now can't find Hugh's recipe. Anyone remember it or has anyone done anything nice using pig's heart? Or will it reside forever in my freezer!!

1 carrier bag
1 bin

Wrap heart tightly in carrier bag, forming a tight seal. Pop into a pre emptied bin, and leave to marinade in it's own rancid juices until the next bin collection day.

Serve at the rubbish dump with shitty nappies, empty deodorant cans and fly faeces.

Not helpful at all, but amused me in my hungover state to type Grin

DH (who normally does not approve of offal but doesn't mind heart) said stuff it with sausagemeat (or anything else) and cook slowly for 3 hours in onion, tomatoes and red wine.
