Veggie recipes for the slow cooker

I got a slow cooker for Christmas but am struggling to find any veggie recipes for it - have you got any? Or do you know of any good websites/books?

carrots
leeks
onions
celery

saute til soft then take off heat and mix in a lil pl flour to coat then added to slow cooker with 1 pint veg stock, lots of thyme and some mixed beans - yum!
And throw in some dumplings if your allowed!

I don't suppose you've ever put any tofu in the slow cooker? I thought the slow cooking might make it absorb the flavours nicely?

I've never used tofu, not a veggie, just like veggie recipes.
They have got anthony doing a slow cooking chat session tomorrow, if i was u i'd make the time for that, I'm sure he'll be able to answer anything u need to know about tofu or slow cooking.
