Hi lovely ladies, it's my DP's birthday in 2 weeks and would like to make him a carrot cake (his fave!). Any tried and tested recipes available on the internet?

oh yes. there is a brilliant bbc good food mag one which works every time and I always get lots of positive comments about.....I will try to find a link...

this is it

though I don't do that icing - I mix up 75g butter with 150g cream cheese and 50g sieved icing sugar + zest one orange as the icing

agree, delia's is good. Moist and crumbly.

I have used this one many times and it's fantastic. Every time I make it everyone asks me for the recipe.

The only change I make is that the ingredients ask you to use baby carrot food - I boil and mash normal carrots instead.

I like the carrot bits. Surely if it was all mashed up, you;d have no carroty bits?
