Need a fab, easy dinner to cook with dp

I am usually a dab hand in the kitchen but seem to have lost my mojo a bit over Christmas. Me and dp are having a night in tonight and want to cook something together. I am literally up for any suggestions as I'm drawing a complete blank Confused

Something easy but lovely is chicken pieces with skin on that you roast in a large tray with a selection of veg/herbs - a bit of chopping but then it sits in the oven for 40 mins at 190 degrees and that's it! Bit of salad or green veg with it and that's all you need to do.

Some ideas to go with the chicken (or use pork chops, lamb chops or sausages if you prefer - all work well):

Potatoes (skin left on) chopped into large chunks with a couple of lemons chopped into quarters, juice squeezed over and lemon skins chucked in - add some thyme, olive oil, salt and pepper and massage it all together, cook in a single layer

Red onions peeled and cut into large wedges (leave root in tact so they don't fall apart) with butternut squash and potatoes

Sweet potatoes, with a little chilli and garlic, onions - nice with lamb

how about a stroganoff? It is so easy to do.

Beef strips, onions, mushrooms and a little garlic, fry in pan until cooked/softened. In a seperate pan make the sauce, some creme fraiche, french mustard, paprika (lots) and a squirt of tomato puree. My children can make this.

Ooo both of those sound delicious. I amsat flicking through all my Nigel Slater books and nothing takes my fancy at all. I might end up going for somehting thai, maybe a green curry? I can make that with my eyes closed. But a roast or a stroganoff would be the perfect thing when it's so cold outside. I have an hour to mull it over before I head to the shops

G&T that is one of our house dishes, so easy and yummy.
Mussels are also always a hit as well
