Chicken Stock - what can I do with it?

I've boiled up a roast chicken carcass and all the bones etc and now have a pot of stock that I don't know how to use. So, what can I use it in, and can I freeze it?

you can use it everywhere where you would a stock cube or stock powder really.
freeze it in small portions to add to the cooking liquid of rice, soups, pasta sauce...

Yes mousy or you could make a lovely french onion soup with it. Just fry 3 big onions and garlic add cup of wine and stock and cook gently yum!

I make soups and risotti with fresh stock, and sometimes I use a few ladles full for pot-roasting a veal roast or a guinea-fowl.

you do have to cook for an hour or so and it's even better reheated, also you can use butter and or olive oil for cooking the onions.
