Please help I need an absolutely fool proof vegetarian risotto recipe for my 12 month old, have discovered he will eat flavoured rice quite well ( had one of those ready mixes for my lunch and he stole most of it but I think it is too salty for a regular meal ) Risotto and I have a bad history of failure to overcome so must be foolproof.

Delia Smith does a delicious fool proof oven baked wild mushroom risotto. You could substitute the mushrooms if you wanted I guess. I'ts the easiest receipe - no constant stirring. It's in her Winter receipe book I think. But bet you could do a google search for oven baked wild mushroom risotto. It's a winner.

I have a fantastic recipe for risotto that is made in the microwave. Takes as long as "stirred" risotto, but you can leave it for 9 minutes at a time while it is cooking.

You could use marigold vegetable bouillon to make it a vegetarian version - I've done that in the past when I've had veggie friends round.

I'll need to get the recipe tonight, but I'll post it for you then (or maybe tomorrow).

yes, arborio is risotto rice. The key, i find , to a good risotto is to coat the rice in the oil/veg mixture for a good while before adding any liquid, almost frying the dry rice. Delias oven baked recipe is good ( low maintenance), but i make risotto for the dt's in the microwave. Will try and dig it out for you.

can I give my 1yr old madeira? what could I use instead, I am hopeless with risotto maybe it is just bad mojo and I should leave well enough alone, thanks for the site though will have a look at some of her other recipes.
