leftover risotto

Any suggestions for turning leftover pea and broad bean risotto into tasty food for a party tomorrow, but not arancini or anything else deep-fried please? It would be great to use it up especially as I'm not sure the rest of the food we're making will be adequate! If I just warm it up it will be nasty and stodgy, won't it?

Be careful with rice, it can be dangerous to warm it up especially after a couple of days.

Not sure what you can do with it tbh.

shoudl be fine to reheat if it was cooled quickly and chilled after the first outin
you'll need to add some extra stock and/or boiling water to prevent stodginess

and make sure it is reheated till REALLY hot I think. Not just a quick warm up but proper boiling.

hey thanks both - I should have thought about the risk of reheating it, perhaps we should just eat it ourselves rather than poison half the street and most of our friends!

rice is one of the worst culprits for food poisoning. I'd fling it on the compost heap. DP is v knowledgeable about food hygiene and is cavalier with reheating old chicken and fish Shock but won't touch old rice with a bargepole.

Arancini can be baked instead of deep fried, so long as you use mozzarella to bind it a little more.
DH makes batches which go straight into the fridge and then bake for 20 mins then next day with no ill effects.

what is it in rice then that makes it so food poisoning prone?

well just to update, we ate it again ourselves and I binned the remainder today. Thanks again all. Bella, it would have been nicer baked as arancini so if I ever have a surplus again I'll try it!
