What to do with leftover roast beef?

It's a decent sized chunk, we are not generally meateaters so I haven't a clue what I can do with it?

I want to make this evenings meal from it

Sir fry with peppers, garlic and onion and serve with rice. If the meat is good this is yummy and takes all of two minutes.

I think we've got all of those things in, except the veg.

Think I will either do that, or some sort of stew with either potatoes or rice

A decent bit of roast beef will be wasted in a stew, plus not really fatty enough to make a really tasty one.

I carved my nice roast beef into slices and served it at room temperature with couscous and vegetables and relish. It went down very well and it was still possible to appreciate the quality of the original cut.

I like my leftover meat sliced, with either sliced fried leftover roast spuds or mash, and some veg or salad and pickles. Simple but yum Smile

The day after that, if there's still some left, a stir fry is always good as others have said, and then if there's still some left then it gets turned into a stew!
