Banana bread/loaf

Despite being the queen of using up leftovers I have never managed to find anything to do with leftover/over-ripe bananas other than a smoothie till someone suggested making banana bread. Anyone recommend a fool proof recipe?

There is a fab recipe in the recipe section, I always put chocolate chips in too. It's dead easy, almost fool proof, and stays moist for ages.

1/2 cup butter
1 cup sugar
2 eggs
2 cups flour
2 tsp baking powder
4 to 6 over ripe bananas
1 tsp vanilla extract
1/2 tsp salt

1.beat butter and sugar until creamy then add vanilla

  1. add beaten eggs little at a time beating well after each addition
  2. Sieve the dry ingredients and add to the wet mix
  3. mash the bananas well and add
  4. mix well and pour into a greased lined medium sized loaf tine
  5. Bake for 1 hour at 180C / 350F.
  6. serve sliced with butter

It keeps really well and the flavour improves after a few days in an airtight container

It is a South African recipe which it is why it is in cups - works perfectly though and the DC love it.

I've got excess bananas too and fancy a change from my usual muffins... geordie, there are several banana cake/loaf recipes, was there one in particular you'd recommend?

you can either add walnuts or chocolate chips (or both? :) ) for variations too.

Just made one tonight as it happens! Used the Sophie Dahl recipe which is delicious:

4 ripe bananas, mashed
200g brown sugar
75g butter
1 egg
1 tbs vanilla

Mix those first. Then add:

pinch of salt
170g plain flour
1 tsp bicarb

Mix it up, bung it in a 2lb loaf tin in the oven for an hour to 1hr 10 mins on 180oC (160 fan oven).

You could probably add 100g of raisins or nuts or choc chips if you want, too.
