White Stilton - what can I do with it?

I've been given a big lump of white Stilton - what can I make with it?

I love blue Stilton but not mad on it without the blue bits - want to make something for tea with it rather than waste it, but it doesn't taste of much.

Broccoli and stilton soup or bake?

Yes, it could lend its texture to a bake and I'll add parmesan for taste. Good idea.
