Nice, hearty veg hotpot/stew?

I'd quite like to make a nice meal tonight and had thought about maybe a hotpot or stew, perhaps with sliced potatoes or dumplings on top.

Does anyone have a delicious recipe they could point me in the direction of, or give me some ideas? I could probably make something up given a few pointers...

If it's no meat the best thing is to get yr fave root vegs,; parsnip, swede, carrot etc. gently fry onions and garlic chopped then add veg chopped and a little stock tightly cover and slowly 'sweat'. cont..

when softened add more veg stock; miso or whatever and add dumplings for half an hour more, you can add cooked rice, haricot beans or pearl barley if you prefer. Enjoy.
