Can you make a nice homemade gravy from it? I am worried there won't be enough juices. It's a 12lb one.

If you put some wine/water/stock in the tin whilst it's cooking you will definitely have a good basis for gravy.

Yes I was thinking if I add chicken stock, red wine, cranberry sauce and a bit of balsamic vinegar it should be a nice base.
