I got a piece of rib eye roast in the market at the weekend, for Xmas. That is, the boneless eye from the rib.
When I got home I notice we have 2.5 kg.
We are 2 adults and a toddler.
The idea of a rib eye roast is v appealing but I am wondering about what to do with the left overs or should I hack off some steaks when I open the vacuum pack? (I looove rib eye steak).
However, would the Xmas day roast be yummier with a bigger bit of meat?
If we have lovely succulent roast beef left over, how shoud I best exploit its lushness?
