I have accidentally defrosted a very nice joint of beef and thought I could cook it for a Christmas Eve dinner (for 5 adults). I usually do something with a MiddleEastern flavour as a nod to Bethlehem and all that but the recipes I know are mostly for minced beef and this is a really nice joint.
Don't want to do a trad roast because that's the next day. Maybe spice and rice or cous cous with it? Any helpful ideas VERY WELCOME!!!
