Blue cheese

Need some ideas on how to use blue cheese in my cooking... in the last week 2 people have given me blue cheese and I don't like eating it on its own so plan to use it in cooking. I found one idea to crumble it over penne with spinach and mushrooms but also fancy a cheesy sauce to use with chicken that I have... have a virus at the mo so don't fnacy leaving the house to buy ingredients so it must be fairly basic... any ideas how to make a simple blue cheese sauce? thanks

P.S. Have a 21month old DD and have never given her blue/mould-ripened cheese before...is it ok for her to eat once cooked also?

It's lovely in a salad with walnuts and avocado, possibly pear too.

Or you can use in a simple salad starter as a sort of dressing. Cut some slices from a baguette and toast, cut into quarters to make croutons. Mash some blue cheese with a fork and add some fromage frais to make a creamy, but lumpy mixture. Just before serving, put salad leaves on the plates, dunk the croutons in the cheese mixture and then put on the salad. It's lovely with the dressing surrounding the crunchy bread. Don't dunk them too far in advance or they'll be soggy. We had it in a restaurant on holiday and asked them how they did it. I think they did it to use up the tail ends of Roquefort on the cheese board, tbh.

its great in soup eg broccoli or celery, add at the end

good with puff pastry in a tart with veg

as tb says, just mix it in with creme fraiche or from frais or cream to make a sauce, even cream cheese would prob work, as long as you heat through a bit to loosen it up.
