One-pot recipes that take 2-3 hours

A couple of nights a week I have to go out to Cubs or DC taxi-ing. It's too late to start cooking when I get back so I like a meal that I can put in the oven before I go out (6ish) then we can eat together when we're all back (8.30ish). It needs to be one-pot and require minimal looking after. DCs still at home can stir, turn up, turn down, put in jacket potatoes etc, but not add complicated bits & pieces.

Lamb shanks and that type of thing are ideal but I'm always after new recipes...

what about buying a slow cooker? there are lots of threads with recipes on here and they are cheap

yes but usually things take much longer than 2-3 hours in a slow cooker.

Try Jamie Oliver's Spicy Goulash. You can do it with tins of roasted peppers. It takes 3.5 hours in the oven, though tbh you could take it out after 3.
