Under cooked gammon

I cooked a gammon shank yesterday and it was slightly under cooked in parts as it had cooked really unevenly.
We ate the cooked bits and I stripped the rest off. Will it be ok to go in a pie if I reheat it really thoroughly? I.e. make filling, simmer for a while then put pie in oven on HOT?

(It was frozen, then defrosted in fridge before I cooked it and we were ok today!)

Excuse my stupidity, but isn't gammon cured in some way? I should think that it will be OK if you cook it thououghly, but I would be more inclined to make pasta out of it. Something you can boil the arse off.
