Scotch Broth

We had a foster person once at catering college (none of that you really needed to know), but he made a gorgeous scotch broth.

Want to try making some, but I thought you guys were probably better to ask than trawling through piles of recipe books until I find the one that works best

Come on tell me a good recipe, and make me less hungry!

OK. Here's my Mum's recipe. I must have eaten gallons of the stuff growing up and still like it!

Serves 8

3 pints of chicken stock
2 large onions
2 or 3 carrots
Half a small turnip (swede)
Leek
2oz rice or barley

Prepare the stock and bring to the boil. Measure out rice or barley and wash under the tap before putting into the stock. Prepare onion, turnip and carrot, cutting them into big chunks. Add all to the stock and cook until the veggies are tender and the rice/barley is cooked (approx 1 hour or 10 mins if you have pressure cooker)

Meanwhile, prepare the leeks - wash and slice. Remove the chunks of veg from the soup and mash in a seperate bowl (you can mash whilst in the pan, but this squishes the rice/barley).

Return the mashed veg to the soup and add the leeks. Cook for around 4 mins

Hope this is of some use to you. Although my Mum always uses chicken stock, you can also use beef or mutton stock.

Oh doh. Forgot to say about seasoning! Just salt and pepper is all you need!
