Blend of orange juice, orange and lemon zest, and a bit of lime juice

Greek yoghurt and honey

Pineapple juice mixed with coconut milk and maybe rum extract but still nice without.

I have a recipe for rhubarb and custard lollies, which I can post if you are interested. They are very pretty with a pink top and cream bottom.

It's from Jo Pratt's In the Mood for Food.

For the rhubarb layer you need:

250g rhubarb (trimmed and sliced)
100g sugar

Cook the rhubarb and sugar together in a pan until the rhubarb is soft. Puree and leave to cool. Once cold, pour into your moulds and freeze till firm.

For the custard:

75ml double cream
150ml bought custard
1 tbs icing sugar (sifted)
vanilla extract or seeds from a pod

Lightly whip the cream and then combine with the other ingredients. Spoon over the rhubarb layer and put a lolly stick in each mould. Freeze.

She also suggests using different fruit purees for variety and if you want to do a quick version you could puree tinned fruit in syrup.

Ummmm nice idea but dp's family are tee total. No alcohol of any kind.
