Fairy cakes disaster - why?!!

My 2 dds have just made fairy cakes but, unfortunately, the end result isn't looking terribly appetising! The cakes have all sunk in the middle and we'd appreciate your words of wisdom.

right proportions of ingredients?
Correct oven temp (if too hot, they look golden before they're cooked inside)
oven opening all the time?!
mixture left for too long before cooking?
you did use SR flour?

but cover them with icing and they will love them!

Good thinking about the icing!!! I'm pretty certain that everything else was OK but will double-check. Thanks for responding. x

Too much over mixing - too much air forced into the mixture and bubbles exploding when cooling - this can cause sinking. When mixing do it quick as soon as mixture is all mixed in then stop. My successful cakes are the ones thrown togther in haste!

Cook just below 180/4 may take a little longer but dont peak too much. Turn off fan.

I agree:

Keep oven door shut.
Don't over mix.
Gently press the top of one before you remove them from oven - if it feels soft they are not ready.
Fill up the dip with icing and they will still be yummy.
