Chocolate truffles

Can I use good quality cooking chocolate for these or does it need to be the normal eating kind? I've got a recipe and it jsut says chocolate, and I presumed it meant cooking so have bought already, now I'm not so sure. Any ideas?

I normally use chocolate with 70% cocoa solids. I think that's the most important thing, high cocoa solids contentXmas Smile

Assuming it is proper cooking chocolate and not that foul "chocolate flavour cake covering" stuff you can get, it will be fine.

Some, like Supercook, is actually Belgian with more cocoa solids in a bar than a whole box of cadbury's.

They'll taste good with either but they'll probably have a glossier finish with the cooking chocolate.
