Cooking ideas for child with dairy intolerance please

Hiya

Does anyone have any interesting recipes for a child with a dairy intolerance? We were going to make cakes sometime but the packet ones we have all need or have egg in them. Can you buy packet ones that would be suitable?

Can you just make a sponge from scratch using dairy free ingredients?

This is really easy and virtually foolproof. Just use a dairy free margarine. You can make buttercream filling with the same marg (I've used that Pure stuff), icing sugar and cocoa.

4oz Self Raising Flour
1 teaspoon baking powder
4oz soft marg
4oz caster sugar
2 large eggs
1 tablespoon cocoa powder
2 7 inch cake tins lightly greased & lined with greaseproof paper

Preheat oven to Gas 3/325 F/170 c
Sift flour/baking powder
Add the other ingredients and whisk. I prefer "Bung all ingrediants into food mixer/processor" though and this seems to work fine!
Add some water if the mixture doesn't drop off a spoon easily.

Shove in the oven for 30 minutes (centre shelf). When cooked, leave in the tin for only 30 seconds

Egg isn't dairy though. Is he allergice to eggs as well?

Dairy means specifically cow products. My son is allergic to cow milk anc cheese but can have goat milk, cheese and butter.

There are egg free cakes in vegan cook books. If you google 'egg-free cake recipe' you get quite a few, but I haven't tried any so can't vouch for them.

Thanks! Will try google - just thought I would ask here first!

He is allergic to dairy products and products containing soya and eggs too!
