Can anyone give me a recipe for fairycakes please? I want to cook this with ds (2yrs) and none of my cookbooks have a recipe. I assume this is because it is so easy to make but a recipe for dummys (me not ds!) would be appreciated. Also, do I need some sort of special tin?

Simplest way .... you need a victoria sponge mix.

Weigh your eggs and use the same weight in butter, SR flour, and caster sugar. Vanilla Ess.

Cream sugar and butter.
Add eggs one by one beating well.
fold in flour. Lightly mix in vanilla ess.

Spoon into paper cases.
Bake at 200 for 15 mins or until golden and springy to the touch.

For choc fairy cakes substitute a tblspn of cocoa for flour.
Or add currants to fina mix.

One further question, how about tins? what do you use?

Just use recipe for victoria sandwich cake.
6 oz soft margarine
6 oz self raising flour
6 oz caster sugar
2-3 teaspoons vanilla essence
Cream Margarine and sugar until fluffy, add 1 egg and essence, beat for a few minutes, then add another egg, beat on a slower speed for another few minutes, add remaining egg, and again beat at same slower speed for a few minutes. Don't worry if your mixture appears to curdle, will sort itself out when you add flour. Fold in self raising flour and you are ready to put into bun cases. You don't particulary need a special bun tray, but I find if you use a "bun tray" the buns will keep their round shape. Cook at 170 (fan oven) for 14 mins. You might have to adjust your oven temp, my oven is quite hot.Finally when cool use a sharp knife to cut a hole in the centre, fill with butter icing (1/2 marg to icing sugar, wee bit of vanilla essence) replace the cap and dust liberally with icing sugar. There you have them, CREAM TOPPERS sell on my farmers market stall for £1.60 per half dozen, so get baking girl!!!! Get baking....

know it aint fairy cakes, but anyone tried nigella lawsons cake in "how to eat"?? im gonna try making buns with that recipie this week - chuck all ingredients in food processor, pour into greased tin and bake.. kept for a week and a half before going even slightly hard!
