Turkey Soup?

All those turkey carcasses and leftovers could make a soup!

Would it be nice? Would you make it like chicken soup? What do you reckon?

We always make a turkey broth with one of those packets of split peas etc for soups. Yummy and nice healthy meal after all that chrismas stodge.

i treat it just like chicken carcasses but don't let it boil just gently simmer) otherwise it sets like jelly. It turns to soup again when you heat it up, but its just not as appealing to me to deal with
